The problem, for me at least, is that you cannot change the key bindings for quick menu interaction and so using that quick menu is next to impossible. It keeps shutting off while I try to figure out what keys to press. On controller it's D-Pad down, then scroll to the far left to Utilities I believe. Then you change Camera mode.

Just play with the Quick Menu. Once you find the right icon, you can leave it up and use CTRL-# to assign a Quick Key to it. I have 1 for changing Ship View, and 2 For choosing On Foot View. It is a toggle. So if in 1st Person it switched to 3rd and vice-versa. Scroll Wheel will also change the selection in the Quick Menu strip left / right.
